Stir-Fried Rice

Ingredients

  • 1 cup onion, diced

  • 3 cloves garlic, minced

  • 3 rainbow carrots, thinly sliced

  • 2 cups chopped stems of kale

  • 3 cups rice

  • Peanut oil

  • 1 Tbsp. soy sauce

Directions

Cook rice according to instructions. Heat peanut oil in wok, and then add onion, garlic, carrots, and kale, sautéing for a few minutes. Add cooked rice and soy sauce. Stir a lot and often. Add leftover protein and serve.
